Summer Fruit Salsa Recipe

Fruit Salsa Recipe

Spoon over no-sugar-added ice cream or custard for a divine dessert.

Ingredients:

  • 1 1/2 cups chopped cantaloupe
  • 1 cup chopped pineapple
  • 1/2 cup craisins (dried cranberries)
  • 1/2 cup chopped fresh mint
  • 2 tablespoons fresh lemon juice
  • Grated zest from 1 lemon
  • 1 teaspoon grated fresh ginger root
  • 1 small jalapeño, seeded and minced

Directions:

  1. Combine ingredients in a bowl, mix well
  2. Cover, and refrigerate
Makes 12 – 1/4 cup servings
