Slow Cooker Holiday Pot Roast Recipe
Makes 6 servings
Ingredients:
• 3 pounds of organic, grass-fed chuck roast
• 2 teaspoons sea salt
• 1 teaspoon cracked black pepper
• 3 cups of beef broth or filtered water
• 2 large red onions, chopped
• 4 organic garlic cloves, chopped
• 2 cups chopped organic celery
• 2 cups chopped organic fennel
• 1 large sprig fresh thyme
• 1/2 cup apple cider vinegar
• 1/3 cup olive oil
Directions:
In a 5-6 quart crock pot/ slow cooker, add the beef, olive oil, garlic, broth, vinegar, salt, pepper and stir. Next add the onions, fennel and thyme. Cover and cook on high for 7 hours. Taste and season with salt and pepper if needed. Can be served with cauliflower purée, if desired.
