Pan Grilled Fish with Chermoula Recipe
Makes 4 servings
Ingredients:
- 2 garlic cloves, smashed
- 1/2 teaspoon kosher salt
- 1/4 cup extra virgin olive oil
- juice and grated zest of 1 lemon
- 2 tablespoons of parsley
- 2 tablespoons cilantro
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon red pepper flakes
- 1 1/2 pounds of fish fillet, or large peeled shrimp, chicken or lamb
- Olive oil for cooking
Directions:
Combine garlic and salt with a fork to make a paste. Add oil, lemon, parsley, cilantro, paprika, cumin, coriander, and red pepper flakes. Smear this paste on surfaces of the fish or meat. Cook on an olive oil coated pan or grill.
