Chicken Thighs in Mushroom Sauce Recipe
Ingredients:
Makes 4 servings
- 2 cups chicken broth
- ¼ cup tomato paste
- 1 teaspoon dried rubbed sage
- Kosher salt and freshly milled black pepper to taste
- 4 skinless, boneless chicken thighs
- 4 teaspoons Italian-seasoned breadcrumbs
- 1 tablespoon extra virgin olive oil
- ½ pound sliced baby bella mushrooms
- 4 green onions, thinly sliced on the diagonal
Directions:
Combine broth with tomato paste, sage, salt, and pepper. Set aside. Sprinkle chicken with additional salt and pepper, then breadcrumbs. Heat oil in a large skillet then cook for 2-3 minutes per side. Add mushroom and brown them for 2 minutes, then add broth mixture. Cover and cook until chicken is done, about 10 minutes. Sprinkle with green onions and serve.
